Carrot and Apple Sandwich

Carrot and Apple Sandwich, Children's Day

Servings: 1

Ingredients:

1 medium Carrot, grated

1 tbsp Raisin

¼ Green Capsicum, deseeded and chopped

90 g (6 tbsp) Dr. Oetker FunFoods Veg Mayonnaise Original

1 medium Apple, grated

30 g (2 tbsp) Seedless Dates, chopped

½ tsp Cinnamon Powder

3 slices Brown Bread

Directions:

  1. For Carrot Spread: In a bowl, add carrot, raisin, capsicum and 3 tbsp mayonnaise. Mix well.
  2. For Apple Spread: In a bowl, add apple, dates, cinnamon powder and remaining mayonnaise. Mix well.
  3. Apply carrot spread on a slice of bread and club it up with another slice of bread.
  4. Apply apple spread on top of the second layer of the bread slice and club it up with another bread slice.
  5. Cut sandwich diagonally into two triangles and serve.

 Burger Pizza

Servings: 1

Ingredients:

 

½ small Onion, diced

½ Tomato, de-seeded and diced

50 g Paneer, diced

¼ Green Capsicum, de-seeded and diced

¼ tsp Oregano, dry

¼ tsp Red Chilli Flakes

Salt

Black Pepper Powder

60 g (4 tbsp) Dr. Oetker FunFoods Pasta & Pizza Sauce

1 Focaccia Burger Bun cut horizontally in two halves

100 g Mozzarella, grated

Directions:

  1. In a bowl, add onion, tomato, paneer, capsicum, oregano, chili flakes, salt, and pepper. Mix well and keep it aside.
  2. Preheat oven to 180°C. Spread 2 tbsp each pasta & pizza sauce on each half of burger bun. Place vegetables on both the buns equally and top it up with cheese.
  3. Bake burger for 3-4 minutes or until cheese melts. Put the top half of baked burger bun on top of lower half. Serve Hot

 Fruity Fun Skewers

Servings: 4

Ingredients:

1 medium Green Apple, cubed

1 Banana, cubed

6 Grapes, seedless

¼ Pineapple, cubed

8-10 Wooden Skewers

90 g (6 tbsp) Dr. Oetker FunFoods Veg Mayonnaise Original

90 g (6 tbsp) Coconut Powder

2 tbsp Colorful Sprinklers

Directions:

  1. Place fruits alternatively on skewers and refrigerate for 30 minutes.
  2. Dip fruit skewers firstly in mayonnaise and once coated roll them up in coconut.
  3. Garnish fruit skewers with sprinklers and serve cold.

Marshmallow & Mayonnaise Salad

Servings: 2-3

Ingredients:

30 g (2 tbsp) Whipped Cream

60 g (4 tbsp) Dr. Oetker FunFoods Veg Mayonnaise

3 tsp Coconut Powder

2 tbsp Tooty Fruity

2 slices canned Pineapple, cubed

5-6 Marshmallows, cubed

5-6 Cherries

1 tbsp each Almond and Cashewnuts, chopped

Directions:

  1. For Salad Dressing: In a bowl, add cream, mayonnaise and coconut powder. Gently mix it together.
  2. Add tooty fruity, pineapple, marshmallow, cherries and nuts in the above dressing. Mix well and serve cold.

Morccan Veg Skewers, Diwali recipes

Ingredients:

2 tbsp Roasted Gram Flour

90 g (6 tbsp) Dr. Oetker FunFoods Garlic Mayonnaise

1 tsp Red Chilli Powder

¼ tsp Cinnamon Powder

Salt

1 Large Onion, diced

¼ each Red, Yellow and Green Bell-Pepper, diced

3-4 Broccoli Florets, boiled

2-3 Mint Leaves, chopped

2 tbsp Olive Oil

Directions:

  1. For Marination: In a bowl, add gram flour, 3 tbsp mayonnaise, chili powder, cinnamon powder, and salt. Mix well.
  2. In above marination add onion, bell peppers, and broccoli. Mix well. Place vegetables one after another in skewers and keep in the refrigerator for 30 minutes.
  3. For sauce: In a bowl add remaining mayonnaise and mint. Mix well.
  4. Heat oil in a non-stick pan (medium flame) and grill skewers from both sides until light brown in color. Serve skewers with sauce.

Cashew Dip

1 tbsp Vegetable Oil

½ small Onion, peeled and chopped

6-7 Cashewnuts, chopped

50 g (3 tbsp) Dr. Oetker FunFoods Veg Mayonnaise Garlic

30 g (2 tbsp) Curd

Salt

Black Pepper Powder

1 small Parsley leaf (for garnish)

Cheesy Dip

½ tbsp Vegetable Oil

4-5 Spring Onion Greens, chopped

50 g Processed Cheese, grated

¼ tsp Oregano

1 tbsp Vegetable Oil

2 small Tomatoes, diced

Directions:

For cashew dip

  1. Heat oil in a non-stick pan (low flame). Sauté onion and cashews for 2-3 minutes.

2 In a bowl add sautéed cashews mixture, mayonnaise, and curd. Mix well.

3 Season it with salt and black pepper powder. Garnish with a parsley leaf and serve.

For Cheesy Dip-

  1. Heat oil in a non-stick pan (low flame). Cook 3-4 spring onion greens, processed cheese, and oregano for 1 minute or until cheese melts
  2. In a bowl add melted cheese and mayonnaise. Mix well. Season it with black pepper powder.
  3. Garnish it with remaining spring onion and serve.

Fried Tomato dip-

  1. Heat oil in a non-stick pan (low flame). Sauté tomatoes and garlic for 3-4 minutes or until garlic is light brown.
  2. In a bowl add cooked tomato mixture, curd, and mayonnaise. Mix well. Season it with salt and black pepper powder.

3 Sprinkle chili powder on top of the dip and serve.

Note- Serve above dips with breadsticks, lavash or raw vegetables

Chocolate and Apple Crumble

Ingredients:

½ tbsp Butter

½ Apple, de-seeded and chopped

1 tsp Honey

½ tsp Cinnamon Powder

1 tbsp Water

60 g (4 tbsp) Quick Oats, soaked for 5 minutes

60 g (4 tbsp) Dr. Oetker FunFoods Chocolate Fudge Spread

1 tbsp Cream

1 tbsp Cashewnuts, chopped

1 tbsp Almonds, chopped

2 Digestive Biscuits, Crushed

Directions:                                                                                                                                 

  1. For Apple Mix: In a saucepan (medium flame), add butter, apple, honey, cinnamon, and water. Sauté for 1-2 minutes or until apple gets soft.
  2. For Chocolate Mix: In a saucepan (low flame), add oats, chocolate fudge, cream, cashew nuts, and almonds. Mix well and cook for 2-3 minutes or until mixture thickens.
  3. For Assembling: In a small round baking dish (3-inch dia.) place ½ of chocolate mix, followed by apple mixture and finish it with remaining chocolate mixture.
  4. Sprinkle crushed biscuits on top and heat in microwave for 1 minute. Serve hot.

Sago Pudding

Servings: 2

Sago Pudding, finger-licking recipe festive season Navratri Dussera
Sago Pudding

Ingredients

300 ml Full Cream Milk

100 gm Sago (Sabudana), soaked in cold water for 1 hour

½ tsp Cinnamon Powder

¼ tsp Vanilla Essence

100 gm Sugar

50 g (3 tbsp) Dr. Oetker FunFoods Veg Mayonnaise Original

3 tsp Berry Compote

½ medium Apple, sliced

1 Mint Sprig

Directions

  1. Heat saucepan (low flame), add milk, sago, cinnamon powder and vanilla essence. Keep stirring until mixture starts to boil.
  2. Add sugar and mayonnaise to above mixture. Stir and cook until mixture thickens. Keep it aside to cool.
  3. Add berry compote at bottom of glass or serving bowl, pour over the pudding, garnish it with apple, mint and serve.

Level: Beginner

Preparation Time: 20 Minutes

Cooking Time:  10 Minutes

Tip: Instead of berry compote, you can also use fruit jam.

Nacho and Corn Chaat                 

Servings: 2

Ingredients:

1 small Onion, chopped

2-3 Green Chilly, chopped

1 medium Tomato, chopped

3-4 Coriander Leaves, chopped

60 g (4 tbsp) Dr. Oetker FunFoods Veg Mayonnaise Original

1 tbsp Tomato Ketchup

1 tsp Chaat Masala Powder

½ tsp Red Chilli Powder

Black Salt

100 g Nachos, Jalapeno flavour

60 g Sweet Corn Kernels, warm

1 tbsp Sev

Directions:

  • In a bowl, add onion, green chilies, tomato, coriander, mayonnaise, ketchup, chaat masala, red chili powder and black salt. Mix well
  • For Assembling: Place nachos around the plate, add above mixture in the middle, sprinkle corn. Garnish with sev and serve.

Peanut Butter Kachori

Peanut Butter Kachori

Ingredients:

1 tbsp Desiccated Coconut Powder

50 g (3 tbsp) Dr. Oetker FunFoods Peanut Butter Crunchy

2 tbsp Almonds, chopped

2 tbsp Cashewnut, chopped

250 g Refined Flour

30 g (2 tbsp) Sugar

50 g (3 tbsp) Clarified Butter

100 ml Water

500 ml Vegetable Oil

Directions:

  1. For stuffing In a bowl mix coconut, peanut Butter, almonds and cashews.
  2. In another bowl, mix flour, sugar, ghee & water. Knead until dough is smooth. Divide dough into 15 equal balls.
  3. Roll each ball into 6 inch dia. round chapatis. Place 1 tbsp of stuffing in centre, pull the edges of the dough to wrap the filling & give shape of kachori.
  4. Heat oil (low flame) in kadhai, fry kachori until golden brown in color. Serve.

 Potato and Mayonnaise Chaat

Servings: 2

Potato and Mayonnaise Chaat

Ingredients:

200 g Baby Potato, boiled (use with skin potato)

1 tbsp Mix Dry Italian Herbs (Oregano, Basil, Thyme and Parsley)

2 tsp Red Chilli Powder

2 Garlic Cloves, chopped

Salt

Black Pepper Powder

60 g (4 tbsp) Dr. Oetker FunFoods Veg Mayonnaise Garlic

2 tbsp Refined Flour

2 tbsp Corn Flour

50 ml Water

100 ml Vegetable Oil

2-3 no Spring Onion, chopped

Directions:

  • Gently press the potatoes, using your hands and keep them aside.
  • For Cajun Spice Mix: In a bowl, add mix Italian herbs, red chilli powder, garlic, salt, and black pepper. Mix well.
  • In another bowl, add 1 tbsp mayonnaise, refined flour, corn flour, water and Cajun spice. Mix well until smooth mixture is formed. Add potatoes and gently mix.
  • Heat oil in a kadhai (medium flame) and deep fry above potatoes for 5 minutes or until crisp.
  • In a bowl, add spring onion, remaining mayonnaise and fried potatoes. Gently mix well and serve hot.

Recipes for Fried Ice Cream

Recipes for deep fried ice cream

In my earlier post, I wrote about deep fried ice cream, here are the recipes to it

If you are used to ordering this dessert treat when eating out, be reassured that it’s easy enough to make at home too, and it’ll taste just as good.

Ingredients

  • 1 litre (33 Oz) ice cream (any flavour).
  • Crushed cereal, such as corn flakes, frosted flakes, cinnamon squares, or puffed rice (it is also possible to use finely crushed sweet hard cookies/crackers or plain breadcrumbs).
  • Flour (a small bowl of it, approx. 1/2 cup).
  • Oil (use an unflavored oil that has a high heat point).
  • 2 eggs (beaten in a bowl large enough for dipping).
  • Cinnamon and/or sugar (optional).

Steps

  1. Prepare the two baking sheets by lining with a silicon liner or parchment paper.Then place the sheets in the freezer for half an hour prior to making the ice cream balls.
  2. Scoop symmetrical balls of ice cream.Try to make each scoop about as large as your fist. Make as many scoops as will fit on the baking sheets.
  3. Harden the scooped ice cream balls in the freezer.Place the sheets of ice cream balls into the freezer and leave them there for at least 30 minutes and up to two hours.
  4. Set out the bowls for dipping.Place a bowl of flour, a bowl of beaten egg and a bowl of crushed cereal or fine cookie/cracker crumbs in the workspace, in a formation that makes it easy to dip in order.
  5. Coat the ice cream.Remove the balls from the freezer, then:
  • Roll each ice cream ball first in the flour bowl. A little flour over each ball provides increased strength.
  • Roll each ice cream ball in the beaten egg.
  • Lastly, roll each ball around in the crushed cereal. (For a tastier treat, you can add cinnamon and sugar to the crushed cereal. Just make sure you still have enough cereal bits on the ice cream to coat the surface of the scoop.)
  • Alternatively, you may dip the ice cream balls in cake batter to make a thin, donut-like coating. Then either fry the balls directly or sprinkle / roll them in crushed cookie or biscuit crumbs to give a crisp shell.
  1. Place the ice cream balls back on the baking sheets, then back in the freezer. Freeze for at least two hours before frying.
  • At this point, you can keep the ice cream balls frozen for up to two months if needed.
  1. Fry the coated ice cream balls.Heat up the oil until it shimmers – approx. 185C or 364F. Fry the ice cream balls in batches two at a time to avoid reducing the temperature of the oil. A low temperature won’t fry them crisply. Fry until each ball turns a light/golden brown all over. Remove as soon as it’s done.
  2. Serve the ice cream balls.Serve immediately after frying, with chocolate or caramel sauce or other favourite sauce.
  • If you’d like the dessert to be colder, place it back into the freezer for a few more minutes after its fried, then pull out and serve a little colder. This is a personal preference and isn’t essential.
